A Sazerac for Percy's Lost City Pt.2

Lets kick off Thursday night with a cocktail that contains all the flavours of Christmas, the Sazerac. part 2 of the Celebration of Percy Fawcett and the Percy’s Lost City scarf.
Sazerac
To make this drink you will need:
- 1 bar spoon of sugar.
- 1 bar spoon absinthe. (I used Cherry Rocher)
- 3 dashes of peychauds bitters.
- 1 dash angostura bitters.
- 2 ounces of bourbon or rye. ( I used Woodford Reserve bourbon)
Instructions:
Place sugar, absinthe and bitters in the bottom of a rocks glass and muddle to break down the sugar crystals. Now add 25ml of bourbon to the glass followed by 3 cubes of ice, stir for around 30 seconds or until you can see that the liquid has doubled. Now add another 25ml of bourbon and another 3 cubes of ice, this time stir for only 10 seconds. Garnish with a lemon peel and enjoy!
